Where to Stay on your next visit to Sydney? Novotel Sydney on Darling Harbour

Last year Sydney clocked in with an average temperature of 19.5 degrees celsius, so it’s practically summer all year round. The harbour panorama lines the main windows of the long walk of through the space of high ceilings and white washed walls and modern simplistic features forming the Ternary. It’s the main entertainment space within the Novotel Darling Harbour

THE HOTEL:

The experience begins with a smooth check-in, for business travellers, 11 event spaces host a range of formal to casual and cool meetings and events. If you’re on a tight schedule, there’s an express check out kiosk allowing guests to resolve their account in seconds.  For leisure stays, the property boasts an outdoor pool, In-Balance gym and tennis court.

The property offers 441 standard/superior rooms, 72 execute/junior suites and 6 one and two bedroom lofts.  Depending on the season, or time of year, rooms sit comfortably within the city average cost per night AU$311 (USD 211).The property is also affiliated with many travel rewards programs including Qantas Frequent Flyer, Velocity Rewards, One World and Accor Plus among others.



The Ternary is the premier meeting point where all guests congregate.

THE DRINKS:

A fully stocked bar with a charismatic bartender and a great list of cocktails greets you on the ascent into the main entertainment area.  Signature cocktails have been created by the team of mixologists and bartenders themselves adding to the character of the venue.  It’s where much of its 4.5 star rating is earned with many of the award winning team boasting accolades from hotel group and sponsored competitions.

On this particular evening, our accommodation includes a complimentary drink, the special of the month which at the time was a coconut pine concoction made for the perfect prelude to an engagement nearby – these alternate each month.

Our previous visits led us to some very easy choices starting with the signatures of Murdoch (Something Different $19) and Mitch (Palpasa $19).  Undertones of sourness in a luscious blend of sweetness.   ‘Something Different’ uses a base of pineapple rippled with sourness from rhubarb bitters, lemon, French herb liquer, Palpasa’ draws the same parallels with a pomegranate base and fresh limes.   Both are gin based.

The familiar faces after many visits here is what brings the feel of it being ‘your local’ and is just as much a destination for residents as it is for visitors in transit.   Service and personable service from Eric and Anna as they embody the essence of The Ternary. Barman, Hakan personally serves us his signature, called Skal! ($19). The sweetness of butterscotch schnapps layered with caramel and pear, offset with licorice flavored bitters of anise.

Using a Swedish Absolute vodka, Hakan explains the inspiration to this cocktail pays homage to his Nordic heritage.  You will find fascinating stories like that not only in the drinks menu, but throughout the bar and dinner menus which are a breeding ground for creative expression from all levels of the kitchen and bar.

THE ASIAN KITCHEN &  GRILL:

At dinner time, you can order A’la carte from the Asian Wok Menu or plenty of options from the grill. THE BUSINESS FACILITIES:
Our selection for the ultimate working lunch called for a trial of the entire bar snack menu which is available all day.   A number of conference and meetings spaces to choose from, the main area offers charging points and comfortable booth seating or high stools for a casual meeting. It’s also great for a catch up with family and friends.   Wi-Fi, print, phone services are available.

THE FOOD:

The Ternary club sandwich was a beast of a sandwich ($22) – double layered with bacon, lettuce, grilled chicken breast, fried egg and cheddar cheese on sourdough with a side of fries.

The traditional Caesar salad ($19) –  which may be less traditional than you might think with pancetta, cos lettuce, and grana parmesan cheese. You can add chicken or prawns and we topped ours with the chicken.

The Moroccan tagine ($20) was perfect as a vegetarian dish with zucchini, carrot,  chickpea, herbed tomato sauce and sourdough to mop up the sauce. It is topped with labneh. You can order this dish san labneh and it is a vegan option.

Chicken dim sim with ginger and shallot chutney is good for a shared snack (or have it all to yourself)

BBQ spiced chicken wings are a great snack if you’re at The Ternary for a few after work drinks.

Whilst we were too full for dessert on this occasion, we certainly come back to try some, in particular, the coconut crème brulee.

THE DESTINATION:

There’s a certain uniqueness in comparison to nearby hotels that can sometimes have a clinical or impersonal feel to them, not only in the service and experience but in the way the selection that’s presented to you as you open the menu is tied to every person working the floor and pass.  It’s an ideal venue for business and leisure.

AccorHotels Cocktail Championship Winner for 2018

Following on from the success of last year, The Pullman Quay Grand Sydney Harbour once again held the AccorHotels Cocktail Championship in the iconic Hacienda Sydney Bar.

Raising money for the AccorHotels Community Fund, twelve talented bartenders from the hotels across the NSW/ACT region competed for the prestigious title, a range of exciting prizes and the chance to have their unique creation featured in the next Hacienda bar menu.

Whilst the three judges were very impressed with the skills, creativity and passion of all the competing bartenders, Mitchell Corbett from Novotel Sydney on Darling Harbour took out first prize with his Dark Side of the moon cocktail – an after dinner drink that is garnished with your choice of stilton blue or cheddar cheese. Special mention also goes to Raymond Vea from Mercure Sydney who was the first runner up.

With over 100+ guests in attendance, the night was a huge success with $5,200 raised for the AccorHotels Community Fund.

A very big thank you to all guests, the bartenders who participated and the team at Pullman Quay Grand Sydney Harbour who helped to put on a fantastic event. It was wonderful to see how many skilled mixologists we have within Accor and we are proud to be able to help showcase their talents.


For those wanting to try Mitchell Corbett’s delicious concoction, pop into Hacienda Sydney the next time you’re in Circular Quay – it’s truly unique!


Congratulations to Mitchell Corbett, The Ternary’s own mixologist who recently competed in, and won the annual AccorHotels Cocktail competition at Hacienda Bar in Circular Quay.

Dark Side of The Moon

“An after dinner drink that will leave you feeling a little comfortably numb. Incorporating cheeseboard flavours into a liquid form – garnished with a choice of stilton blue or cheddar cheese. If the moon is made of cheese then the dark side of the moon is made of blue cheese.” 

Ingredients 

- 30ml Nocello hazelnut liqueur
- 30ml Four pillars shiraz gin
- 30ml Maxwell’s mead liqueur
- 30ml Cloud apple juice
- 30ml Charcoal, walnut and lemon infused honey
- 10ml egg white
Reverse dry shaken and served neat with skewered triangle.

The Ternary Pimm's Pop-up



In the midst of our very own concrete jungle, among towering skyscrapers… a green oasis awaits. In perfect time for summer, The Ternary introduces an all new Pimm’s Pop-Up Bar on the spacious terrace at the forefront of Novotel Sydney on Darling Harbour. Popping up from November 2017 through until March 2018.


The Pimm’s Pop-up on the Ternary Terrace will operate from Friday to Sunday, offering delicious food, refreshing beverages and chilled tunes. Think astro turf, Pimm’s deck chairs, fairy lights and even the odd chance of a game of Croquet. This relaxed garden-like setting with panoramic views of the Sydney city skyline will be the perfect place to unwind and soak up the sunshine this summer.




The creative cocktail menu offers 8 delicious cocktails including the traditional Ternary Pimm’s Jug (29) or tasty twists on the classics such as the Britain Meets Barbados – mount gay rum, Pimm’s, pineapple juice, apple juice, lemon juice and falernum syrup (15) or the Viola Spritz – Pimm’s, lavender syrup, lime, prosseco and soda (15). In addition, as a twist to the classic British G&T the Four Pillars Shiraz Gin and Cascade Tonic (9) will also be available together with a carefully curated wine and boutique beer list.


Visiting with a group? Share a delicious platter and choose from a variety of options including; pork belly sliders with spiced apple compote (55), pizzetta of prosciutto and mozzarella with wild rocket (55) or Ternary mini cheeseburgers with spicy tomato relish (55). Alternatively choose from an assortment of nibbles including salt and pepper calamari with soy and chilli (18.50), Pimm’s shaved pastrami on rye with honey mustard dressing (20) or indulge a little with a 500g bucket of cooked prawns with cocktail sauce and toasted sourdough (50).

While the garden bartenders create your delicious concoctions, why not partake in a game of Croquet on the ‘lawn’. Soak up some Sydney summer sunshine on The Ternary Terrace and enjoy all the Pimm’s Pop-up has to offer! Perfect for an end of week beverage with colleagues, a romantic afternoon for two or simply a catch up with friends over some delicious drinks and nibbles.

A GIN FLING THIS SPRING



The Ternary Restaurant & Bar has introduced an exclusive ‘Gin Flight’ in celebration of Spring. Available at The Ternary bar until November 2017, the Gin Flight showcases unique blends from local distilleries.

Consisting of four exquisite gins with the inclusion of the; Distillery Botanica, Four Pillars Bloody Shiraz, Ink and the Melbourne Gin Company Dry Gin. The collective offering provides customers a unique tasting experience to indulge in an array of enticing spirits, combined with Capi tonic water and various garnishes for $32.

In addition, each month The Ternary will feature a unique cocktail creation by one of their talented bar team. The ‘Bartender Signatures’ (from $15 – $17) will be a celebration of flavours, unique tastes and mixology skills.

Meet The Ternary Team | Savanna Jurevics



We sat down with our newly appointed Events Sales 
Executive at The Ternary Savanna Jurevics,
and asked her the below questions:


Q: Can you tell us a bit about your background & journey till now? When you joined the team, why you choose hospitality (F&B?) and your past experiences?

A: I started with Accor as a porter a job that taught me a lot about customer service but I was never quite satisfied, I studied hospitality and always craved a career in Food and Beverage. After The Ternary opened and with the help of my mentors I transferred across as a bartender and soon after found my feet as the Host of The Ternary where my passion, knowledge and service skills developed and grew alongside The Ternary, soon after I became a supervisor and now The Ternary Sales Executive and I’ll never look back.
Q. What you do for fun when not working?
A. I have a passion for watching live music and I am always out and about but I am even happier when I am cooking with good food and good wine which is probably why I love my role with The Ternary so much. Hospitality has always been a part of my life and I couldn’t be happier when I am cooking and celebrating with friends and family.
Q. The best aspect about Working at The Ternary?
A. The Ternary is all about sharing a culinary experience and knowing that I can be a part of that experience and truly make it memorable is the most rewarding job. It’s like hosting a party 7 nights of the week and there is nothing more satisfying then when your friends leave a party talking about how great it was.
